B o-tannic, it is the alchemy between two cooks Florent and Romain and a sommelier, Guillaume, with a common dream: to create and present our cuisine, to merge our techniques and our know-how.
Alain Pégouret, Joël Robuchon and Guy Savoy were our trainers and our mentors. Inspired by this heritage, we will work each product with a requirement of cooking, texture and flavors.
At our table will be side by side Tahitian condiments and Thai coconut milk soup, rib of beef matured with pepper and fresh mint condiments and sea bream in a spice crust: we will offer you a cuisine of great tradition with touches of the world, special combinations of the common which find their source in French excellence and which sail towards other seas, other continents - Polynesia, India, Asia ... - explored throughout our travels. Botany is an integral part of our cuisine.
The extensive wine list, representative of the terroirs, will be dedicated to the wines of authors, from biodynamic culture.
Refined, nomadic, gourmet, our cuisine will be served in a spirit of conviviality and sharing that is close to our hearts. It is in this same spirit that we wish to favor local products and short circuits, express our creativity to offer exceptional cuisine at a reasonable price.
Bo-tannique is located in the historic heart of Bordeaux, on Place Saint-Projet.
